Grinder Pasta Salad
This easy grinder pasta salad went viral. It's inspired by the popular Italian style grinder sandwich recipe. Perfect spring and summer side dish for your next bbq cookout.

- 1 ½ cup Dried Fusilli Pasta or Short Pasta of Choice
Grinder Dressing
- ½ cup Mayo
- 2 teaspoon Dijon Mustard
- ½ teaspoon Garlic (Minced or Chopped)
- 1 tablespoon Red Wine Vinegar
- 1 tablespoon Honey
- ½ teaspoon Dried Oregano
- ½ teaspoon Dried Basil
- ½ teaspoon Red Pepper Flakes
- Black Pepper To Taste
Deli/Vegetables/Cheese
- 4oz Provolone
- 6oz Ham
- 3oz Salami
- 3oz Pepperoni
- ¼ cup Pepperoncini Peppers (Sliced)
- ¾ cup Tomatoes (Chopped) About 2 small plum tomatoes
- ⅓ cup Red Onion (Chopped)
- ¾ cup Seedless Cucumbers (Chopped) About 2 mini
Cook Pasta
In a saucepan bring water to boil to cook the fusilli pasta. Cook pasta using the package directions till al dente or the consistency you prefer. I like to overcook mine by 2 minutes.
Strain the fusilli and rinse with cold water. Set aside.
Assemble Pasta Salad
Cut and prep deli meats, cheese, and vegetables.
In a large mixing bowl add pasta and prepped ingredients.
Top with grinder dressing and mix well.
Keep the pasta salad refrigerated until ready to eat. Garnish with whole pepperoncini peppers or herbs. Enjoy.
