Sweet Potato Cobbler

This sweet potato cobbler with cake mix and canned yams is so easy to make. Perfect for the fall season, on a Thanksgiving or Holiday buffet.

  • Mixing Bowls
  • Rubber spatula

Ingredients

  • 1 29oz Canned Sweet Potatoes or Yams
  • 1 15.25oz Butter Pecan Cake Mix or Yellow Cake Mix
  • 1 cup Butter (Softened)
  • 2 teaspoon Vanilla Extract
  • 1 teaspoon Pumpkin Spice or Mixed Spice

Instructions

  • Preheat the oven to 350℉.
  • Open the canned yams or sweet potatoes. Pour out about half of the liquid.
  • Add the remaining sweet potatoes and liquid to a 9x13 baking dish. Cut into small pieces and spread into an even layer.
  • Sprinkle with pumpkin spice and vanilla extract.
  • In a mixing bowl add the cake mix and softened butter.
  • Mix until a soft dough is formed. Layer onto the cut sweet potatoes into small clumps.
  • Place into the oven and bake for 50 minutes until golden brown and bubbly.
  • Remove from the oven and let cool. Serve warm with marshmallows, chopped pecans, whipped topping or vanilla ice cream. Enjoy.
