Smash Burger Tacos
In a bowl combine ground beef, salt, black pepper, and onion powder. Mix well and form into 4 balls.
Place cast iron griddle on high heat.
Smash Technique
Place a ball of burger meat in the middle of the griddle and top with a flour tortilla. With another cast iron skillet or a burger press (which is best), flatten or smash the meat and tortilla down. Cook for about 2-3 minutes.
Flip over the smash burger taco to crisp up the tortilla side. Add a slice of cheese and cooked bacon, cover for a minute to melt the cheese. Remove from the heat, place onto a plate, and let cool for a few minutes. It's ready for the toppings and burger sauce. Enjoy.
Spread Technique
Place a ball of burger meat onto the middle of flour tortilla. With your hand spread the meat into a thin layer from edge to edge of the tortilla. Place meat side down onto the hot skillet and cook for 2-3 minutes.
