Easy Tater Tot Breakfast Casserole
This easy breakfast casserole with crispy tater tots, gooey cheese, savory sausage, and fluffy eggs. It can be made the night before and oven baked in the morning.

- 1 Package Frozen Tater Tots (28-32oz)
- 8-12 Eggs or 2 -3 cups of Cholesterol Free Egg Substitute
- ½-1 lb. Cooked Sausage, Ham or Crumbled Bacon
- 1-2 Cups Cheddar Cheese, Shredded
Preheat oven to 350°F.
In a large bowl whisk together the eggs and cooked meat. Mix until well incorporated.
Add in ½ the amount of shredded cheese and about 2 cups of the tater tots. Mix until combined.
Pour egg casserole mixture into the baking dish and spread into an even layer.
Sprinkle the remaining shredded cheddar cheese.
Arrange the frozen tater tots nicely onto the mixture.
Place uncovered into the oven and bake for 45-50 minutes. Until golden brown and bubbly. The egg casserole should be set and fully cooked through.
Let cool for 15-20 minutes and cut into squares. Enjoy.
