When it comes to easy breakfast recipes, this is easily on the top of my list. It’s layered with crispy tater tots, gooey cheese, savory meat, and fluffy eggs. Yum.
Serve this one pan wonder for potlucks, busy weekends, meal prep and holiday mornings.
You’ll love it even more with your favorite toppings like salsa, sour cream, green onions, ketchup, avocado, everything bagel seasoning, and hot sauce.

Ingredients
Eggs- Whole eggs or cholesterol free substitute like eggbeaters. Can use up to a dozen eggs depending on how eggy you like your breakfast casseroles.
Tater Tots - Frozen tater tots makes this casserole so convenient, hearty and filling. Plus who doesn’t love a crispy tater tot.
Meat - Fully cooked sausage crumbles or any meat. Bacon, ham or turkey sausage. For a meat-free version sautéed veggies can be substituted.
Cheese - Shredded cheddar cheese is a classic but colby, pepper jack or American would be delicious.
This casserole can be made dairy-free because it does not have milk. Use dairy-free shredded cheese.

How To Make This Recipe

- Prep the eggs, shredded cheddar, fully cooked sausage and frozen tater tots.
- Preheat oven to 350°F.

3. In a large bowl whisk together the eggs and cooked meat. Mix until well incorporated.
4. Add in ½ the amount of shredded cheese and about 2 cups of the tater tots. Mix until combined.

5. Pour egg casserole mixture into the baking dish and spread into an even layer. Sprinkle the remaining shredded cheddar cheese.

6. Arrange the frozen tater tots nicely onto the mixture.
7. Place uncovered into the oven and bake for 45-50 minutes. Until golden brown and bubbly. The egg casserole should be set and fully cooked through.

8. Let cool for 15-20 minutes and cut into squares. Enjoy.
