Cheddar Bay Butter Swim Biscuits

You’ll love these easy cheddar bay butter swim biscuits using Red Lobster mix and buttermilk. Baked in butter to moist and golden brown perfection.

I’m such a fan of Red Lobster’s cheddar bay biscuit mix. Recipes include chicken cobbler, chicken casserole, breakfast casserole, and a must-try at-home classic biscuit baking hack. 

This is my new favorite way to make them. They bake up so soft and fluffy with a cheesy, garlicky, buttery crust. The perfect starter or side dish for any soup, dinner, or holiday buffet.

Ingredients

Red Lobster Biscuit Mix- Options include Original Cheddar Bay, Honey Butter, Rosemary Garlic Parmesan, or Gluten-Free Cheddar Bay. Both Costco and Sam’s Club sell a large box with 4 portioned mixes. 

Butter- I used unsalted butter.

Cheese - Yellow cheddar of choice, medium, sharp or extra sharp

All-Purpose Flour and Baking Powder

Milk - Buttermilk is best, but if you're not a fan of the flavor, substitute half and half.   

Sugar & Spices - Extra optional flavor enhancers - garlic and onion powder. 

Swimming in Butter  

Butter swim biscuits are hands down the easiest way to make fluffy biscuits. No rolling and no kneading, spread the mixture into a delicious pool of melted butter. 

The butter adds so much flavor, makes them flaky, and steams the dough for a moist texture. The exterior baked up golden brown with those crisp edges. Yum.

Tips & Suggestions

I prefer to use an 8x8 baking pan, so the biscuits bake up nice and tall. If you choose to use a larger pan, they will be a bit thinner. 

Dip your knife along the sides, where the melted butter is. This prevents the dough mixture from sticking to the knife when pre-slicing the biscuits. The butter also helps to separate the biscuits a bit while baking. 

If you use milk instead of buttermilk, the batter will be thinner. I recommend to use less milk for a thicker batter. 

Don’t forget to preheat the oven to the right temperature before placing the biscuits. 

Let the biscuits cool for at least 10 minutes, this allows the butter to absorb into the biscuits.

Mix In’s and Variations

To level up these red lobster biscuits, mix in yummy flavors to the biscuit batter. 

  • Fully Cooked Meats & Seafood - Shrimp, crab, sausage, ham or bacon. 
  • Jalapeños
  • Green Onions
  • Fresh Parsley
  • Cilantro
  • Cooked Broccoli
  • Sweet Onions
  • Roasted Red Peppers
  • Cream Cheese
  • Feta
  • Parmesan
  • Mozzarella 
  • Pimento Cheese
  • Hot Honey

Storage and Leftovers

Leftovers can be stored in an airtight container or freezer ziplock bag in the fridge for up to 4 daysand and can be frozen for up to 3 months. 

To reheat the biscuits, place them in the microwave wrapped in a damp paper towel. Check them in 10 second intervals until warm through. 

Step-By-Step Instructions and Photos

  1. Preheat the oven to 400℉.

Make The Biscuit Mixture

2. In a mixing bowl, add the Red Lobster biscuit mix, flour, baking powder, and optional sugar, garlic, and onion powder. Mix well to get any lumps out.

3. Mix or fold in the shredded cheddar cheese.

4. Pour in the cold buttermilk.

5. Mix until a dough is formed or just combined, try not to overmix.

Assemble and Bake

6. Grab a baking pan. I prefer an 8x8 for nice, thick biscuits.

7. Pour in the melted butter.

8. Scrape the biscuit mixture into the pan with the butter. Spread into an even layer.

9. Score the dough into 9 pieces with a butter knife. Dip the butter knife into the butter for easier slicing. Place into the preheated oven.

Mix The Garlic Herb Butter

10. In a small mixing bowl, add the melted butter and the herb seasoning packet. Mix well.

11. Bake for 30-35 minutes or until golden brown.

12. Brush on the herb butter while the biscuits are hot. Allow them to cool for at least 10 minutes.

Ingredients

  • 1 11.36oz Red Lobster Cheddar Bay Biscuit Mix
  • 2 cups Buttermilk, cold
  • 1 ⅓ cup All-Purpose Flour
  • 1 ½ teaspoon Baking Powder
  • 1 ½ cups Yellow Cheddar Cheese, Shredded
  • ½ cup Unsalted Butter, melted
  • 1 tablespoon Sugar (optional)
  • Onion and Garlic Powder (optional)

Garlic Butter Topping

  • Enclosed Herb Seasoning Packet
  • 2 tablespoon Unsalted Butter, melted

Instructions

  • Preheat the oven to 400℉.

Make The Biscuit Mixture

  • In a mixing bowl, add the Red Lobster biscuit mix, flour, baking powder, and optional sugar, garlic, and onion powder. Mix well to get any lumps out.
  • Mix or fold in the shredded cheddar cheese.
  • Pour in the cold buttermilk. Mix until a dough is formed or just combined, try not to overmix.

Assemble and Bake

  • Pour the melted butter into an 8x8 baking pan.
  • Scrape the biscuit mixture into the pan with the butter. Spread into an even layer.
  • Score the dough into 9 pieces with a butter knife.
    Tip: Dip the butter knife into the butter for easier slicing.
  • Place into the oven and bake for 30-35 minutes or until golden brown.
    Tip: Use a toothpick to test the doneness; it should come out clean.

Garlic Herb Butter

  • In a small mixing bowl add the melted butter and the herb seasoning packet. Mix well.
  • Remove the biscuits from the oven. Brush on the herb butter while the biscuits are hot. Allow them to cool for at least 10 minutes.
  • Serve warm and Enjoy.
