Jiffy Corn Casserole
This corn casserole with Jiffy mix bakes up so soft, sweet, fluffy and moist similar to a pudding or soufflé. You'll only need 5 ingredients.

- 1 8.5oz Jiffy Cornbread Mix
- 1 15oz Whole Kernel Corn Drained
- 1 15oz Creamed Corn
- 1 cup Sour Cream
- ½ cup Butter Melted
- 1 Whole Egg
Preheat oven to 350°F and grease a 8x8 baking pan.
Into a mixing bowl sift the jiffy cornbread mix to remove any lumps.
Add corn, egg, sour cream, and melted butter. Mix well.
Pour batter into the greased the baking pan.
Place into the oven and bake uncovered for 45-55 minutes until golden on the edges.
Remove from the oven and let cool for 30 minutes to an hour. Cut into squares or spoon out onto plate. Top with butter and honey, if preferred. Enjoy.
Double the recipe to make enough to fit a 9x13 baking pan, that can easily serve about 8-12 guests as a side dish.
Popular add in's ½ cup to 1 cup shredded cheddar cheese, 4oz can of green chilies or 2 tablespoons of sugar or honey.
