This is the best recipe for corn casserole using Jiffy Cornbread Mix. It has been shared so many times from lots of Tiktok creators, it’s that good. 

There is just something about the flavor of the mix, it makes the best corny side dish.

How To Make Jiffy Corn Casserole  

Not only is this recipe super easy to make the texture is soft, rich and creamy. It’s also called Southern Corn Pudding or Corn Soufflé. 

Mix together jiffy mix with corn, butter, and sour cream to form a oh so creamy batter. Then oven baked and spooned onto a plate for the most amazing side dish.

Ingredients and Substitutions

Mix - One box Jiffy Cornbread Muffin Mix. 

Eggs- One large whole egg.

Butter - Salted or unsalted will be delicious.

Cream - Full fat sour cream is preferred. 

Corn - Canned whole sweet corn and creamed corn. 

How To Make A Corn Casserole In a 9x13 Pan?

Double the recipe which will make enough to fit a 9x13 baking pan. That can easily serve about 8-12 guests as a side dish.

Savory Variations

If you would like a savory casserole try these flavorful mix in’s. 

  • Diced Jalapeños and Green Chilies 
  • Fresh or Jarred Roasted Peppers - Red or Pimento. 
  • Sun Dried Tomatoes
  • Cheddar Cheese - This is a very popular add in. 
  • Fresh or Dried Herbs - Thyme, Rosemary, Parsley, Basil or Sage.
  • Spice and Blends - Garlic and Onion Powder, Cajun or Old Bay.  
  • Bacon or Sausage - Fully Cooked.

Tips & Suggestions

Add sugar to the batter for extra sweetness or drizzle with honey. 

Preheat the oven early because the casserole batter mixes up quickly. 

Sift or use a whisk to break up the clumpy dry box mix to prevent a lumpy batter. 

If you have the time after mixing the batter let it rest for 20 minutes. This allows the cornmeal to absorb the liquid and soften up.

Make Ahead and Leftovers

This recipe can be easily made ahead, prepped and baked up to 2 days before serving.

Store leftovers wrapped in plastic wrap or air tight container. Keep in the refrigerator for up to 2 days or frozen up to 3 months. 

It can be easily reheated individually in the microwave or oven.

  1. Grab the four recipe ingredients needed for the recipe. Jiffy mix, butter, whole kernel sweet corn, creamed corn and egg.
  2. Preheat oven to 350°F and grease a 8x8 baking pan.

3. Into a mixing bowl sift the jiffy cornbread mix to remove any lumps.

4. Prep the ingredients, drain the whole corn and melt the butter.

5. Add all ingredients into the mixing bowl.

6. Using a whisk or rubber spatula mix well until combined.

7. Pour batter into the greased 8x8 baking pan.

8. Place into the oven and bake uncovered for 45-55 minutes until golden on the edges.

9. Remove from the oven and let cool for 30 minutes to an hour to set up.

10. Cut into squares or spoon out onto plate. Top with butter and honey, if preferred. Enjoy.

Notes
