Ingredients

Season Chicken

  • 1 ½ lbs. Chicken Breast, Tenders or Thighs
  • 1-2 tbsp. All-Purpose Seasoning Blend of Choice and Italian Seasoning
  • Dry Spice Options - Onion Powder, Garlic Powder, Smoked Paprika, Oregano, Basil and Thyme
  • Salt and Black Pepper
  • 2 tbsp. Butter
  • 2 tbsp. Avocado or Vegetable Oil
  • ¼ cup All-Purpose Flour

Blush Alfredo Sauce

  • 2 tbsp. Butter
  • 4 cloves Garlic (Chopped)
  • ½ cup Onion (Chopped)
  • ¼ cup Sun-dried Tomatoes (Chopped)
  • 1 tsp. Dry Oregano
  • 1 tsp. Dry Thyme
  • ½ tsp. Red Pepper Flakes
  • 1 cup Chicken Broth
  • 1 ½ cups Heavy Cream
  • 1 cup Parmesan Cheese (Grated)
  • 2 tbsp Italian Parsley or Basil (Chopped)
  • Salt and Pepper
  • 8oz Egg Pappardelle Dry Pasta or Pasta of Choice

Instructions

Season Chicken

  • In a bowl add thin chicken breasts and season with your favorite all-purpose spices and Italian herbs, salt, and pepper. Set aside. Marinate overnight is best, if you have the time.

Cook Pasta

  • In a large saucepan bring water to boil to cook the egg pappardelle pasta. Cook pasta using the package directions till al dente or the consistency you prefer.

Cook The Chicken and Blush Alfredo Sauce

  • Dredge seasoned chicken with the flour.
  • In a skillet on medium heat add the butter and oil. Cook the seasoned chicken in batches, remove, and set aside. Make sure the chicken is fully cooked.
  • Reduce the heat to low-medium and add chopped onion, garlic, and sun-dried tomatoes. Saute for 2-3 minutes.
  • Deglaze the pot by adding the chicken broth. Use a whisk to scrape the bottom to mix in all that good flavor. Mix well and cook for 1-2 minutes.
  • Add the heavy cream, oregano, thyme, and red pepper flakes. Mix well and cook until the sauce is hot and comes to a simmer.
  • Reduce heat to low and slowly add in grated parmesan cheese. Salt and pepper to taste. (Save about ½ cup of the sauce to drizzle onto the chicken later).
    Optional: After removing the sauce mix in any cooked vegetable (ie mushrooms or baby spinach).
  • Remove the skillet from the heat and mix in cooked pappardelle pasta. Top with the cooked lightly breaded chicken breasts, drizzle the reserved sauce on each piece, and garnish with extra parmesan and chopped parsley. Enjoy.
