This easy marry me chicken pasta recipe went viral on TikTok. It has a blush homemade alfredo with zesty sun-dried tomatoes, garlic, juicy lightly breaded chicken breast, and penne pasta. Similar to tuscan chicken pasta without spinach.

Engagement Chicken Pasta Recipe 

This engagement chicken pasta recipe has similar flavors to Tuscan Chicken Pasta, including sun dried tomatoes, garlic, onions, oregano, thyme, basil, red pepper flakes, and chicken broth. Which adds so much flavor to the creamy alfredo sauce that is topped onto the juicy chicken and penne pasta. Yum.

Ingredients and Substitutions

Chicken- Thin whole chicken breast is what I used but tenders or thighs will work perfectly.

Sun-Dried Tomatoes - Jarred sun dried tomatoes in oil is best, substitute bagged sun-dried tomatoes in a pinch. 

Italian Seasonings & Spices - Your favorite mixed Italian blend would be great. I like to use individual spices and seasoning like oregano, thyme, basil, red pepper flakes, and fresh chopped parsley. Salt and pepper as well. 

Chicken Broth - Boxed, canned, or bouillon would be great. Substitute vegetable broth if preferred. 

Butter & Oil - Unsalted is best to control the sodium. Use a high temp neutral oil like avocado or vegetable.

Onion & Garlic- Fresh chopped garlic and onion adds so much flavor but onion and garlic powder can be substituted. 

Flour - All-purpose adds a nice crust to the chicken, can substitute cornstarch.

Heavy Cream - Heavy whipping cream is used to easily make a quick alfredo sauce. Substitute half and half in a pinch. 

Parmesan - Freshly grated parmesan is best. To save time use pre-shredded or grated. 

Pasta - Any short or long pasta would be great. Penne, bowtie, rigatoni,  linguini, fettuccini, tortellini.

Ways To Thin Out or Flatten Chicken Breasts

The easiest and fast way to cook chicken in a skillet is to flatten them out a bit. Here are three options. 

  • If the chicken breast is thick, carefully with a knife butterfly cut them in half, to make two pieces.
  • Place the whole chicken breast into a gallon zip bag and with a meat tenderizer pound it flat, then cut into two pieces. 
  • Cut the whole chicken breast into two large chunks (similar shape to a square) then butterfly cut them in half or pound them flat. It’s easier to pound each individual chunk this way. One chicken breast will have four portions.

Tips and Suggestions 

Start boiling your pasta first, while cooking the chicken, to get dinner on the table quicker.

Season and marinate the chicken with your favorite spices overnight for best flavor. 

Substitute the chicken for salmon or shrimp. 

Add a touch of white wine for extra flavor. 

Set aside about a half cup of the flavorful alfredo sauce. To garnish the top of the chicken with. 

Popular add in’s are baby spinach, mushrooms, sliced cherry tomatoes, zucchini, and fresh chopped basil. 

Leftover jarred sun-dried tomatoes in oil can be used on pizza, a dip for bread, or as a sandwich spread. It can last for to 5 months in the refrigerator once opened.

Leftovers and Storage

If there are any leftovers, they can be stored in an airtight container in the refrigerator for up to 3 days and easily reheated in the microwave.

Step By Step Photos and Directions

  1. Grab all the ingredients and prep them.
  2. In a bowl add thin chicken breasts and season with your favorite all-purpose spices and Italian herbs, salt, and pepper. Set aside.

3. In a large saucepan bring water to boil to cook the egg pappardelle pasta. Cook pasta using the package directions till al dente or the consistency you prefer.

4. Dredge the seasoned chicken with the flour.

5. In a skillet on medium heat add the butter and oil. Cook the seasoned chicken in batches, remove, and set aside. Make sure the chicken is fully cooked.

6. Reduce the heat to low-medium and add chopped onion, garlic, and sun-dried tomatoes. Saute for 2-3 minutes.

7. Deglaze the pot by adding the chicken broth. Use a whisk to scrape the bottom to mix in all that good flavor. Mix well and cook for 1-2 minutes.

8. Add the heavy cream, oregano, thyme, and red pepper flakes. Mix well and cook until the sauce is hot.

9. Reduce heat to low and slowly add in grated parmesan cheese. Salt and pepper to taste. (Save about ½ cup of the sauce to drizzle onto the chicken later).

Optional: After removing the sauce, mix in any cooked vegetable (ie mushrooms or baby spinach).

Ingredients

Season Chicken

  • 1 ½ lbs. Chicken Breast, Tenders or Thighs
  • 1-2 tbsp. All-Purpose Seasoning Blend of Choice and Italian Seasoning
  • Dry Spice Options - Onion Powder, Garlic Powder, Smoked Paprika, Oregano, Basil and Thyme
  • Salt and Black Pepper
  • 2 tbsp. Butter
  • 2 tbsp. Avocado or Vegetable Oil
  • ¼ cup All-Purpose Flour

Blush Alfredo Sauce

  • 2 tbsp. Butter
  • 4 cloves Garlic (Chopped)
  • ½ cup Onion (Chopped)
  • ¼ cup Sun-dried Tomatoes (Chopped)
  • 1 tsp. Dry Oregano
  • 1 tsp. Dry Thyme
  • ½ tsp. Red Pepper Flakes
  • 1 cup Chicken Broth
  • 1 ½ cups Heavy Cream
  • 1 cup Parmesan Cheese (Grated)
  • 2 tbsp Italian Parsley or Basil (Chopped)
  • Salt and Pepper
  • 8oz Egg Pappardelle Dry Pasta or Pasta of Choice

Instructions

Season Chicken

  • In a bowl add thin chicken breasts and season with your favorite all-purpose spices and Italian herbs, salt, and pepper. Set aside. Marinate overnight is best, if you have the time.

Cook Pasta

  • In a large saucepan bring water to boil to cook the egg pappardelle pasta. Cook pasta using the package directions till al dente or the consistency you prefer.

Cook The Chicken and Blush Alfredo Sauce
