Cut or prep the sugar cookie dough into 12 round portions.
Bake on parchment lined baking sheet as instructed on the package.
Try not to over bake them. Allow them to cool on the baking sheet for 5 minutes. Then transfer the cookies onto a cooling rack to fully cool.
Prep The Strawberries
Rinse and dry the fresh strawberries.
With a knife and cutting board or small plate, cut the strawberries into small cubes.
Keep refrigerated until ready to assemble the cookies
Crumble The Graham Crackers
Place about 2 sheets of honey graham crackers into a small zipper bag.
With a rolling pin or your hands crumble into to small pieces. Set aside until ready to assemble the cookies.
Prep No Bake Cheesecake Filling (Optional)
Place some of the cheesecake filling into a disposable or reusable piping bag. Keep refrigerated until ready to assemble the cookies.
Assemble The Cookies
Make the sugar cookies are fully cooled before assembling.
Spread or pipe a layer of the no bake cheesecake filling on the sugar cookies.
Sprinkle about 1 teaspoon of the graham crackers crumbs onto the filling.
Top with a small spoonful of chopped fresh strawberries.
These cookies are best served and eaten right after they are assembled. The chilled cheesecake filling is very perishable and cannot be kept at room temp for more than an half hour. Enjoy.
