The easiest way is to buy all four ingredients from the grocery store. There are four elements, sugar cookie base, no bake cheesecake filling topping, graham cracker crumbs and fresh chopped strawberries.

Ingredients and Substitutions
Sugar Cookies - Store bought sugar cookie dough, sugar cookie mix, store bought baked or homemade (I have a quick recipe below).
Graham Crackers - Honey flavored graham crackers is recommended but vanilla wafers like Nilla’s can be substituted.
No Bake Cheesecake Filling- I love store bought Philadelphia Cheesecake Filling or homemade (recipe below, as well).
Strawberries - Fresh strawberries is best but canned strawberry filling or frozen can be used in a pinch.
Sugar Cookie Base
The viral recipe videos use store bought Pillsbury sugar cookie dough. If you using the 24 portioned pack, roll 2 pieces together into a ball. This will make a good size bakery cookie.
Recipe For Homemade Sugar Cookie Dough
I love to make buttery sugar cookies, trust me its worth the effort. This recipe below make about 8 cookies.
- ½ cup Salted Butter, softened
- 1 ¼ cup all-purpose flour
- 1 teaspoon baking powder
- 1 egg
- ½ cup white granulated sugar
- ½ teaspoon vanilla or almond extract
- Mix softened butter and sugar until creamy and fluffy.
- Add egg and extract, mix well.
- Mix in the flour and baking powder until combined. Try not to over mix the cookie dough.
- Refrigerated the dough for 1 hour.
- Portion the cookie dough into 8 equal round balls.
- Place on a parchment lined baking sheet.
- Bake at 350°F for 10 minutes until puffed up. Try not to over bake them.
- Remove from the oven and let cool on the baking tray to 5 minutes then fully cool on a rack.
Graham Crackers
Honey flavored graham crackers is the popular choice when making the crust of a cheesecake.
Any vanilla or neutral flavored crisp cookie or biscuit can be substituted. Nilla’s or vanilla wafers, golden Oreo, shortbread, Maria cookies or digestive biscuits.

I love the no bake Philadelphia cheesecake filling found in the refrigerated section of the grocery store. It has that New York cheesecake flavor with hints of sour cream and lemon.
Now it can be out of stock or hard to find at times, so I have included a quick and easy no bake cheesecake filing below. If you would prefer an easier substitution, try store bought cream cheese frosting.
Recipe For No Bake Cheesecake Filling
This recipe makes about 1 ½ cups of cheesecake filling.
- 8oz Block of Cream Cheese, softened
- 2 Tablespoons of Sour Cream
- 1 ½ cups of Powdered Sugar
- ½ teaspoon of Vanilla Extract
- ½ teaspoon of Lemon Extract of Fresh Lemon Juice (optional)
- Using a hand mixer or whisk, mix together the softened cream cheese and sour cream until smooth and lump free.
- Slowly add in the powdered sugar ½ cup at a time. Mix well until fluffy.
- Mix in the flavorings and extracts.
- Keep the filling refrigerated until ready to serve.
Strawberries
The is cookie recipe has a nice strawberry flavor, using fresh chopped strawberries. I used about 1 strawberry per cookie.
If fresh strawberries are out of stock at the grocery store, canned strawberry filling is a great substitute. Use a heaping tablespoon portioned on each of the cookies.

Make Ahead and Storage
To prep or make these amazing cookies ahead of time, bake the sugar cookies and store them on the counter for up to 2 days. Crumble the graham crackers and store in a zipper storage bag.
Chop the fresh strawberries and store them in an airtight container in the refrigerator for up to 2 days. Keep the store bought or homemade no bake cheesecake filling in the refrigerator as well. Now you have everything to assemble these cookies in less than 15 minutes.
These cookies are best served and eaten right after they are assembled. The chilled cheesecake filling is very perishable and cannot be kept at room temp for more than an half hour.
Store leftover assembled cookies in an air tight container in the refrigerator for up to 2 days.

9. Sprinkle about 1 teaspoon of the graham crackers crumbs onto the filling.
