Gigi Hadid Original Recipe
- The recipe serves 2, but can be easily double to serve a family of 4
- A quarter cup of olive oil
- Uses red onion
- No vodka, I show in the step by step when to add if you prefer it
- A whole teaspoon of red pepper flakes
- Tomato paste with basil
- Mini or small shells pasta, I substituted a larger similar look pasta orecchiette
- Topped with extra parmesan cheese

Gigi cooks down the red onion and garlic in olive oil. Then adds tomato paste infused with basil, which is caramelized down. Heavy cream is added along with spicy red pepper flakes, butter, parmesan and pasta water to form a delicious smooth sauce. Yum.

Tomato Paste - Gigi used a tomato paste with basil in it, but regular tomato paste can be substituted.
Cream - Heavy cream or whipping cream is used. Substitute cream cheese with extra pasta water in a pinch.
Parmesan & Butter- Grated Parmesan and salted butter. Freshly grated is best but pre-grated or shelf stable parmesan can be used in a pinch.
Pasta - Short pasta used in the recipe. To me it look like mini or small shells. I used a bigger pasta orecchiette which looks similar to mini shells when cooked, but substitute your favorite pasta shape.
Tips and Suggestions
Start boiling your pasta first, to get dinner on the table quicker.
Don’t forget to reserve about ½ cup of the pasta water to add to the sauce later, if needed.
Don’t overcook your pasta. Stick to the package directions.
Mix a vegetable or cooked protein to the pasta like sausage, chicken, leftover steak, shrimp, baby spinach, or mushrooms.

- Grab all the ingredients and prep them. Pasta, olive oil, butter, tomato paste, red onion, garlic, red pepper flakes, heavy cream, basil and parmesan cheese.
- Being to cook pasta using package directions. Reserve about ½ cup of pasta water.

6. Add in heavy cream and ¼ cup of pasta water. Mix well. Cook for about 2-3 minutes until heavy cream is hot, but not boiling. This in the spicy saucy part.
7. Reduce heat to low. And in orecchiette and butter. Mix in extra pasta water if needed.
8. Mix in parmesan cheese, until melted and combined.

Ingredients
- 2 cups Orecchiette Pasta (About ½ a box)
- ¼ cup Olive Oil
- 2 tablespoon Finely Chopped Red Onion (or Shallot)
- 2 cloves Finely Chopped Garlic
- ¼ cup Tomato Paste (with Basil Preferred)
- ½ cup Heavy Cream
- ¼ - ½ cup Reserved Pasta Water (or More If Needed)
- 1 tablespoon Butter
- ¼ cup Finely Grated Parmesan Cheese
- 1 tps Dry Basil (optional)
- Water for Boiling, Salt and Black Pepper
Instructions
Cook Pasta
- In a large saucepan bring water to boil to cook the orecchiette pasta. Cook pasta using the package directions till al dente or the consistency you prefer. Reserve about ¼ - ½ cup of the pasta water for the spicy sauce.
Make Spicy Pasta Sauce
- In a skillet on medium heat add olive oil, red onion, and garlic. Cook until soft about 2-3 minutes.
