Christmas Cake Mix Cookies

These Christmas cake mix cookies are so soft and simple to make with just 2 ingredients. No eggs and super affordable to make.

It doesn’t get any easier to make delicious homemade cookies for the Christmas holiday season using a box of cake mix. They bake up super soft with a chewy middle. 

You can have cookies ready to be placed in the oven in about 5 minutes.

Ingredients

Cake Mix - Use any brand boxed and flavor. 

Whipped Topping- Just make sure its fully thawed for easy mixing.

Boxed Cake Mix

During the Christmas season you’ll see lots of flavored boxed cake mixes. The one I see most times is the Funfetti flavor. It’s a white cake base with red and green colored sprinkles. 

If you cannot find it on the grocery store shelves, grab any white boxed cake mix and sprinkles of choice. 

Best of all it can be made for any holiday or special event throughout the year. You’ll just need the right colored sprinkles.

Whipped Topping 

Whipped topping is not whipped cream, so I can not recommend it as a substitute. You can find whipped topping or cool whip in the freezer section of most US grocery stores. 

You can thaw unopened whipping topping 3 ways: 

  • In the refrigerator, which will take about 4-5 hours
  • On the counter, which will take about 1-2 hours. Mix to check the consistency, after an hour. 
  • In a large bowl of cold water for 30-45 minutes. 

Budget Friendly Cookies

These cookies are so affordable to make since there are no eggs, butter or oil. It cost me less than $3.00 (USD 2024) to make 2 dozen sprinkle cookies. 

They are perfect to school bake sales, birthday parties, holidays and events. So good.

Tips For Super Soft and Chewy Cookies

  • The key too soft and chewy cookies is to not over bake them. You want them a little gooey in the middle. Cookies will continue to cook on the hot cookie sheet, so keep them there for 3-5 minutes. Then transfer to a cooling rack. 
  • Don’t forget when baking the cookies keep an eye on them. Take the cookies out when they are still gooey in the middle for the best results.
  • Store the cookies in an airtight container, zipper bag, or individually wrapped them in plastic sealed bag. It will keep them softer longer.
  • If you have the time let your cookies chill in the refrigerator. A minimum of 2 hours in the fridge. It really helps the cookie achieve a great texture. 

Storage and Leftovers

To keep these cookies soft and moist for up to a week store in an airtight container or sealable bag. 

These also freeze really well, place them in a freezer bag for up to six months.

Step-By-Step Instructions and Photos

  1. Grab your tools, cake mix, and thawed whipped topping.
  2. Preheat oven to 350F and line sheet pans with parchment paper.

3. Place cake mix into large mixing bowl.

4. Add whipped topping.

5. Use a rubber spatula to gently fold the two ingredients together until the mixture is smooth.

6. Using a small cookie scoop about 1 ½ tablespoon, portion cookie dough and place on sheet pan. About 2-3 inches apart.

7. Place sheet pan in the oven to bake for 7 to 8 minutes. Bake until just set, they will look underdone, try not to over bake. The cookies should be very soft.

8. Leave the cookies to cool for 3-4 minutes on the hot sheet pan, the cookies will continue to cook. Then transfer to a cooling rack to fully cool. Enjoy.

Ingredients

  • 1 15.25 oz Cake Mix, any flavor
  • 1 8 oz Cool Whip or Whipped Topping, thawed

Instructions

  • Preheat oven to 350F and line sheet pans with parchment paper.
  • In a large mixing bowl combine the boxed cake mix and whipped topping. Use a rubber spatula to gently fold the two ingredients together until the mixture is smooth.
  • Using a small cookie scoop about 1 ½ tablespoon, portion cookie dough and place on sheet pan. About 2-3 inches apart.
  • Place sheet pan in the oven to bake for 7 to 8 minutes. Bake until just set, they will look underdone, try not to over bake. The cookies should be very soft.
  • Leave the cookies to cool for 3-4 minutes on the hot sheet pan, the cookies will continue to cook. Then transfer to a cooling rack to fully cool. Enjoy.

Notes

Makes about 2 dozen small cookies (about  1 ½ tablespoon of cookie dough) or 1 dozen medium bakery style cookies (about  ¼ cup of cookie dough).
