This easy small batch refrigerator dill pickles recipe, makes one jar. Taste so fresh, crunchy, flavorful and less than 10 minutes to put together.

No canning is required, just top the flavorful brine over your mini cucumbers and refrigerate.

Thin-skinned mini cucumbers are popular, including Kirby, Boston Pickling, English Hothouse, or Gherkins.

What is the quick pickle method?

Quick pickling is a cold brine of water, vinegar, salt, spices, and flavorings. Place the brine over vegetables and refrigerated for at least 24 hours. This brining or marinating method adds amazing flavor to vegetables.

The best part of making homemade pickles is choosing the flavor and seasoning to add. If you want a classic, simple or weird. Below are 25 options that will add amazing flavor to your next pickle recipe.

Do you prefer sour, spicy, sweet, or fully flavored pickles? This list has you covered, choose your favorites. 

  1. Vinegar - White, Rice, Wine, or Apple Cider
  2. Peppercorns - Black, Pink, White, or Green
  3. Salt- Pink, Kosher, and Pickling
  4. Garlic - Fresh or Dried
  5. Dill - Fresh or Dried

Easy Three Step No Cook Refrigerator Pickles

Step One - Cut your mini seedless cucumbers and place them in your glass jar.

Step Two - Make your Brine and when it is cool pour it onto your cucumbers and cover the jar. 

Step Three - Refrigerate for at least 24 hours. Enjoy. 

Do you have to boil your pickling brine?

You do not have to boil your brine, but heating it up can help release the flavors. For example, if you add whole spices like peppercorns or dried bay leaf.

How To Make Refrigerator Pickles Step by Step

Prep Cucumbers
  1. Prep mini cucumber is. Cut into spears or slices.

2. After cutting cucumbers place into storage container or jar.

Brine with all ingredients in saucepan before brining it to a boil.

3. In saucepan add water, flavorings, and spice.

4. Mix well this is the brine. Bring brine to a boil.

5. Remove brine from heat and let fully cool.

6. Pour the cooled brine onto the cucumbers in the jar.

7. If needed add additional cold water to cover the cucumbers.

8. Cover the jar and place it into the refrigerator. Refrigerate for at least 4 hours but overnight is best. Enjoy.

FAQ

Are refrigerator pickles easy to make? 

Making the brine for refrigerator pickles takes less than 30 minutes, which includes the cooling of the brine. After the brine added to the cucumbers, refrigerate for 24 hours. 

How long do refrigerator pickles last? 

Homemade refrigerator pickles can last up to 6 - 8 weeks. Over time they will be less crunchy. Be cautious around the six-week time frame, don’t forget to check for an overly cloudy brine, mold, or an off smell. 

Can refrigerator pickles be stored at room temp? 

Refrigerator pickles must always be kept at a cold temperature. Although it might contain salt and vinegar, it has not been pasteurized and will grow bacteria in a warm environment.

  • Knife
  • Cutting Board
  • Glass Jar  Large Working Jar with Plastic Lid
  • Metal Whisk
  • Saucepan
  • Measuring Cups and Spoons

Ingredients

  • 3 Mini Cucumbers (4 inches in length cut into 4 spears or sliced)
  • ½ teaspoon ½ teaspoon Dry Dill Weed (2 teaspoon Fresh Dill)
  • ¾ cup Water + extra water of need to fill your jar
  • ¼ cup White Vinegar
  • 2 Cloves Fresh Garlic
  • 1 teaspoon Salt
  • 2 teaspoon Sugar
  • 3-4 pieces All Spice Berries
  • 1,4 teaspoon Whole Mustard Seeds
  • 5 pieces Whole Black Peppercorns
  • 1 Whole Dry Chili (Chili de Arbol)

Instructions

  • Cut your cucumber into 4 spears or slices. Place into your jar or storage container.
  • In a saucepan add ¾ cup water, vinegar, salt, sugar, and all other flavorings or spices.
  • Bring brine to a boil and cool completely.
  • Pour the cooled brine onto the cucumbers in the jar. If needed add additional cold water to cover the cucumbers.
  • Cover the jar and place it into the refrigerator. 
  • Refrigerate for at least 4 hours but overnight is best. Enjoy.
