This sounds amazing! Would love to try this but it has to be gluten free for me. What do you think I can substitute for the wafers?

I haven't tried this yet, but it looks perfect for some standard and vegan strawberry shortcakes I'm planning for this summer. I bought some plant-based strawberry jello mix because I avoid gelatin, but I find vegan butter really unpleasant-tasting, so I've been looking for a strawberry crunch topping recipe that doesn't call for butter. I may not be able to find pink sugar wafers, but Voortman makes a vegan strawberry wafer, Oreos are vegan, and I can add a bit of the jello mix for extra colour if necessary. HUGE THANKS!
