Jalapeño Popper Chicken Dip

Jalapeno Popper Chicken Dip is the best appetizer. It’s oven baked to creamy and cheesy perfection. With fresh jalapeños, rotisserie chicken, cream cheese, cheddar, and bacon.

The first time I recipe tested this jalapeño popper dip, I thought why haven’t I been adding chicken this whole time. It was so filling, flavorful, and super delicious.

Dips are my go to appetizers for game days, parties, and holidays. They are so easy to make and can easily feed a crowd. 

This oven baked dip can be made ahead or prepped the night before the big day, it takes just 30 minutes to bake.

Ingredients

Cooked Chicken - A store-bought rotisserie or homemade cooked chicken is the easiest way to go. Remove the skin and shred or cut it into chunks. 

Bacon- Fully cooked to crispy perfection. 

Cream Cheese- Full fat is best, but low fat can be used in a pinch.

Sour Cream - Any fat content sour cream will work, I used the regular full fat variety.

Mayonnaise - Choose your favorite mayo brand like Dukes, Hellman’s or Kraft.

Cheese- Cheddar or Colby jack are recommend. Add mozzarella for extra cheese pull. 

Seasonings & Fresh Vegetables - Garlic powder, fresh jalapeño peppers, and green onions. 

Crispy Topping- Panko bread crumbs or crushed buttery Ritz Crackers.

Store bought rotisserie chicken on wood cutting board.

Rotisserie Chicken 

I like to add rotisserie chicken to creamy dips. You can find it at most grocery stores and membership clubs. 

It’s a great shortcut and makes the dip extra filling and satisfying. One chicken can be added to bulk up 2-3 recipes depending on the size.

Make Ahead

If you are wanting to prep this the night or morning before, mix the filling first. Spread into the baking dish and cover then place into the refrigerator. 

Remove right before you’re ready to make it and top with the Panko bread crumbs or crushed Ritz crackers. Add a few minutes to your cook time because it has been refrigerated.

Leftovers & Storage 

Leftovers should be stored in an airtight container for up to a 3-4 days in the refrigerator. 

You can freeze the dip but during thawing the texture may change a bit, because of the dairy-based ingredients.

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a mixing bowl add cream cheese, sour cream, mayo, and garlic powder.

3. Mix well until smooth, I like to use a hand mixer.

4. Add the chopped jalapeño peppers, bacon, green onions, and chicken.

5. Fold in and mix well.

6. Add the shredded cheese.

7. Mix until combined.

8. Scrape the popper mixture into a baking dish and spread into an even layer.

9. Sprinkle the Panko breadcrumbs or crushed Ritz crackers.

10. Place uncovered into the oven and bake for 20-25 minutes. Bake until the topping is golden and the dip is bubbly.

11. Carefully remove from the oven and top with green onions and extra jalapeños. Serve with tortilla chips, crackers, or vegetables. Enjoy.

  • Baking Dish 9x13 or Cast Iron Skillet
  • Cutting Board and Knife
  • Mixing Bowl
  • Rubber spatula
  • Hand Mixer

Ingredients

  • 2 8oz Cream Cheese softened
  • 2 cups Chicken fully cooked and shredded
  • ½ cup Bacon fully cooked and chopped
  • 4 fresh Jalapeño Peppers deseeded and chopped
  • ½ cup Sour Cream
  • ½ cup Mayo
  • 1 tablespoon Garlic Powder
  • 2 cups Cheddar or Colby Jack Cheese shredded (separated in 1 cup portions)
  • 2 tablespoon Green Onions chopped
  • 1 cup Panko Breadcrumbs or Crushed Ritz Crackers

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a mixing bowl add cream cheese, sour cream, mayo, and garlic powder. Mix well until smooth, I like to use a hand mixer.
  • Fold in the jalapeño peppers, bacon, green onions, chicken, and shredded cheese.
  • Scrape the popper mixture into a baking dish and spread into an even layer.
  • Sprinkle the Panko breadcrumbs or crushed Ritz crackers.
  • Place uncovered into the oven and bake for 20-25 minutes. Bake until the topping is golden and the dip is bubbly.
