Sushi Cucumber Salad

This viral cucumber salad is a deconstructed sushi roll made in a deli container. Popular California, Philadelphia, or spicy shrimp roll.

This is the perfect grab and go salad. It’s creamy, fresh, and flavorful, eat it with roasted seaweed sheets and you won’t miss the rice. Nutrient dense, lower carbs, and oh so delicious. 

Inspired by The Cucumber Guy on TikTok, he says: “Sometimes you just need to eat an entire cucumber.

Ingredients

Cucumbers- Seedless English Cucumbers or Persian cucumbers are best.  

Onions- Thinly sliced red, white, or sweet onions.

Whipped Cream Cheese - Much easier to mix in. 

Mayonnaise - Choose your favorite mayo brand like Hellman’s, Best Foods, Duke’s, or Kraft. 

Protein- Imitation crab, smoked salmon, canned tuna, avocado, and shrimp.  

Sauces and Seasonings- Sesame oil, soy sauce, rice vinegar, furikake, everything bagel seasoning, spicy mayo, sriracha, pickled ginger, and wasabi.

Deli Container

This recipe is made right in a deli container. The ingredients are shake up, for easier mixing use a fork.

If you would like to add even more flavor or want to change up a few ingredients and toppings, check out these delicious options.

High Protein and Lower Fat Substitutions 

If you would prefer a healthier cucumber salad, substitute a 1:1 ratio. I like to use a combination of the following options. 

Light Mayo - Reduced Fat brands like Hellman’s, Dukes and Kraft. 

Mayo Alternatives - Organic, Avocado, Kewpie and Vegan. 

Sour Cream - Full fat and Light or Reduced Fat. 

Yogurt - High Protein Plain Greek Yogurt, Non and Reduced Fat. 

Cottage Cheese - Blended Cottage Cheese is another delicious high protein alternative. You want to use a food processor or stick blender for a very smooth texture. 

Storage

Cucumbers are mostly water, it’s easy for the creamy texture to become diluted. I prefer to eat the salad right away or refrigerate it for up to 24 hours.  

How To Make Sushi Cucumber Salad Step By Step

1. In a deli container or mixing bowl add cucumbers and onions.

2. Top with mayo, cream cheese, soy sauce, vinegar, and sesame oil. Add in your preferred mix in's.

3. Shake the deli container, can use a fork or spoon for easier mixing.

4. The creamy dressing and toppings should coat the cucumbers. Sprinkle desired toppings and sauces.

5. Ready to be enjoyed right out of the deli container or with roasted seaweed sheets. Keep leftover salad chilled in the refrigerator.

Sushi Cucumber Salad

  • Deli Container or Airtight Container
  • Mandolin or Knife & Cutting Board
  • Measuring Tools
  • Mixing Bowl optional

Ingredients

  • 1 English Cucumber, sliced thinly (about ¼ inch)
  • ¼ cup Red or White Onion, sliced thinly (about ¼ inch)
  • 2-3 tablespoon Whipped Cream Cheese
  • ¼ cup Mayo
  • ½ tablespoon Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Sesame Oil

Mix In's & Toppings Options

  • ¼ cup Imitation Crab, Smoked Salmon, Canned Tuna, or Fully Cooked Shrimp Chopped
  • ½ Avocado Diced
  • ½ teaspoon Furikake or Everything Bagel Seasoning
  • Spicy Mayo, Sriracha, Pickled Ginger, Wasabi, Green Onions

Instructions

  • In a deli container or mixing bowl add cucumbers and onions.
  • Top with mayo, cream cheese, soy sauce, vinegar, and sesame oil. Add in your preferred mix in's.
  • Shake the deli container, can use a fork or spoon for easier mixing. The creamy dressing and toppings should coat the cucumbers. Sprinkle desired toppings and sauces.
  • Ready to be enjoyed right out of the deli container or with roasted seaweed sheets. Keep leftover salad chilled in the refrigerator.

Notes

For easier mixing in a deli container, use a fork or spoon during the shaking process. 
This cucumber sushi roll salad is best enjoyed immediately for the best quality.
