Creamy Cucumber Salad

This creamy cucumber salad made with a fresh seedless English cucumber, thinly sliced onions, cream cheese, sour cream, mayo, and fresh dill.

If you're looking for an amazing summertime salad that doubles as a side dish, cucumbers is the way to go. 

They are light, crispy, and so refreshing. This recipe is oh so creamy and delicious. 

Ingredients

Cucumbers- Seedless English Cucumbers or Persian cucumbers are best.  

Onions- Thinly sliced red, white, or sweet onions.

Whipped Cream Cheese - Much easier to mix in. 

Mayonnaise - Choose your favorite mayo brand like Hellman’s, Best Foods, Duke’s, or Kraft. 

Sour Cream- Full or low fat. 

Lemon- Fresh squeezed is best. Vinegar is a great alternative.  

Spices and Seasonings- Fresh dill, onion powder, garlic powder, sugar, and pepper.

Deli Container

This recipe can be made right in a deli container. I toss all the ingredients and shake it up. Let it chill for 1 hour, if you want it extra chilled. So good. 

For easier mixing in a deli container use a fork, if needed during the shaking process.

High Protein and Lower Fat Substitutions 

f you would prefer a healthier cucumber salad, substitute a 1:1 ratio. I like to use a combination of the following options. 

Light Mayo - Reduced Fat brands like Hellman’s, Dukes and Kraft. 

Mayo Alternatives - Organic, Avocado, Kewpie and Vegan. 

Sour Cream - Full fat and Light or Reduced Fat. 

Yogurt - High Protein Plain Greek Yogurt, Non and Reduced Fat. 

Cottage Cheese - Blended Cottage Cheese is another delicious high protein alternative. You want to use a food processor or stick blender for a very smooth texture.

Storage & Make Ahead 

Cucumbers are mostly water, it’s easy for the salad dressing to become diluted. I prefer to eat the salad right away or refrigerate it for up to 4 hours. 

If you are wanting to prep this for dinner, holidays, or in advance. Slice the cucumbers and make the dressing separately. Toss when ready to serve. 

How To Make Creamy Cucumber Salad Step By Step

1. In a deli container or mixing bowl add cucumbers and onions.

2. Top with sour cream, mayo, cream cheese, lemon juice, sugar, onion powder, garlic powder, salt, pepper, and dill.

3. Shake the deli container or mix with a rubber spatula. The creamy dressing should coat the cucumbers. Ready to Enjoy. Keep chilled in the refrigerator.

  • Mandolin or Knife & Cutting Board
  • Measuring Tools
  • Mixing Bowl optional

Ingredients

  • 1 English Cucumber, sliced thinly (about ¼ inch)
  • ¼ cup Red or White Onion, sliced thinly (about ¼ inch)
  • ¼ cup Sour Cream
  • ¼ cup Mayo
  • 2 tablespoon Whipped Cream Cheese
  • 2 tablespoon Fresh Lemon Juice or Vinegar
  • 2 teaspoon Sugar
  • ½ teaspoon Onion Powder
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Fresh Dill or Dried
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions

  • In a deli container or mixing bowl add cucumbers and onions.
  • Top with sour cream, mayo, cream cheese, lemon juice, sugar, onion powder, garlic powder, salt, pepper, and dill.
  • Shake the deli container or mix with a rubber spatula. The creamy dressing should coat the cucumbers. Ready to Enjoy. Keep chilled in the refrigerator.

Notes

This cucumber salad is best enjoyed immediately for the best quality.
