How To Make Chicken Stuffing Casserole

The best casseroles always has butter and cheese, this one delivers. Oven baked in a 9x13 baking dish we are mixing the creamy chicken and vegetable filling, then topping it with cheddar cheese and a buttery stuffing mix.

You can easily make substitution and additions. Save time by using rotisserie chicken or substituting leftover turkey from Thanksgiving.

Ingredients and Substitutions

Stuffing Mix - Stovetop Stuffing Mix is really popular and easy to find at most grocery stores. I chose the classic chicken flavor but you can substitute another flavor you prefer.

For a Southern Dressing style casserole use cornbread stuffing mix.

Chicken - Boneless chicken breasts, tenders, or thighs will work. Cut them in chucks to cook quickly. Season them well to your preference.

A store-bought rotisserie chicken or leftover cooked chicken is the easiest way to go, and will save on the cooking time. Remove the skin and shred or cut it into chunks.

Condensed Soup - Any brand will do, I chose the Campbell’s. Cream of chicken and celery has great flavor but you can substitute cream of mushroom, cream of broccoli cheddar or condensed cheddar cheese soup. Yum.

Butter - Salted or unsalted will be delicious. You can also use a butter substitute as well.

Cheese - Choose your favorite, mild or sharp cheddar, american or colby jack.

Sour Cream - Full-fat sour cream is used but you can substitute heavy cream with a 1:1 ratio.

Mixed Vegetables - I used frozen mixed but canned vegetables can be substituted. Peas and carrots would be great as well.

Seasonings and Spices - Optional seasonings can be added based on your family's preference. Dry spices like garlic, onion, red pepper flakes, Italian blend, parsley, oregano, basil, or all-purpose blends.

Tips & Suggestions

Preheat the oven first to get dinner on the table quicker, especially if your using a precooked chicken

If cooking raw chicken using the boiling method add a touch of chicken stock or bouillon for extra flavor.

For extra crunch top with crispy onions or jalapeños.

Add aromatics like, chopped sweet peppers, onion, or garlic to the filling.

What To Serve With Chicken Stuffing Casserole

This is a great one pan meal with starch, vegetable and a protein. For that extra holiday vibe serve with canned cranberry sauce, extra side of green beans, and baked sweet potato topped with cinnamon butter and marshmallows.

Since the oven is going additional roasted vegetables or dinner rolls with butter would be great sides as well.

Cool and crispy salad, fruit salad, or baby carrots with ranch.

This was a great weeknight comfort meal. We'll definitely be making this again. We thought it could have used a 2nd box of stuffing, but we may have had more chicken than the recipe calls for. I used a whole rotisserie chicken.
