Cheddar Bay Chicken Casserole

This cheddar bay chicken casserole recipe will be your go to one pan meal for dinner. Creamy alfredo sauce topped with juicy seasoned chicken and a buttery red lobster cheddar bay biscuit topping. 

If you love recipes using the red lobster cheddar bay biscuit mix add this one to your weekly rotation. Similar to a chicken parmesan casserole.

How To Make Cheddar Bay Chicken Casserole

The best casseroles or oven bakes always has butter and cheese. In a 9x13 baking dish we are layering alfredo sauce, sautéed chicken and thick helping of cheesy biscuits. 

Oven baked until brown and bubbly. Then brush on the buttery herb topping. Yum.

Ingredients and Substitutions

Chicken - Boneless chicken breasts, tenders, or thighs will work. Season them well to your preference. 

Red Lobster Cheddar Bay Biscuit Mix - The addition of this biscuit mix really makes this chicken casserole amazing, but you can substitute another biscuit mix like Bisquick. 

I also saw a gluten-free Red Lobster Cheddar Bay Biscuit Mix and Bisquick on the shelf at the grocery store.

Ingredients for bake in their packaging, bottles, and a clear measuring cup of milk.

Sauce - Store bought jarred alfredo sauce is so convenient, but homemade would be extra delicious. A great substitution would be one can of condensed chicken soup or cheddar condensed soup mixed with a half cup of milk. 

I love creamy but if you prefer a red sauce substitute your favorite jarred marinara sauce. 

Butter - A stick of unsalted butter is best if you're wanting to reduce the sodium. 

Milk - Creamy whole milk is preferred but 2% can be used in a pinch. 

Cheese - Choose your favorite, mild or sharp cheddar, american or colby jack.

Tips & Suggestions  

Saute or brown the chicken for extra flavor. 

Add aromatics like, sautéed sweet peppers, onion, and garlic to the alfredo sauce for extra flavor.

Make sure the chicken is fully cooked after baking, internal temperature of 165 degrees Fahrenheit. 

If you want more meaty flavor toss in fully cooked sliced Italian chicken sausage or chopped bacon.

How To Serve 

This is a great one pan meal with starch and a protein. Since the oven is going cook or roast vegetables like green beans, broccoli, mixed veggies or peas and carrots.

Leftovers and Storage

After enjoying this chicken bake, store the leftovers covered in an airtight container for up to 4 days in the refrigerator. It can also be frozen for up to3 months. 

Reheateasily in the microwave or the oven covered in foil. 

For freezer prep the whole baked dish can be fully cooled and wrapped well to prevent freezer burn. Let in thaw in the fridge and it’s ready to reheat.

Step By Step Photos and Directions

  1. Grab the chicken and your seasoning of choice.

2. Can split them in half for a faster cooking time. Season to your preference.

3. In a fry pan brown each side of the seasoned chicken. It does not have to cooked through, it will be finished in the oven. Set aside.

4. Preheat oven to 400 degrees Fahrenheit.

5. Grab the ingredients to make the cheddar bay biscuit topping. Open the biscuit mix box and set aside the herb topping packet.

6. In a mixing bowl add the red lobster biscuit mix, cheddar cheese, and milk.

7. Mix until combined. Set aside.

8. In a 9x13 baking dish add the alfredo sauce or mixed condensed soup and milk evenly.

9. Top with the seasoned chicken.

10. Spoon on the biscuit topping. Spreading evenly as possible.

11. Place in oven and bake uncovered for 25 minutes or until golden brown and bubbly. Make sure the chicken is cooked through to 165 degrees Fahrenheit.

12. While the casserole is baking, mix the herb packet with the melted butter. Set aside.

13. Remove the finished bake from the oven.

Ingredients

  • 1 Box Red Lobster Cheddar Bay Biscuit Mix About 11.36oz
  • 1-2 lbs. Chicken Breasts, Thighs or Tenders Seasoned To Your Preference
  • 1 15oz Alfredo Sauce or 1 Can of Cream of Chicken Condensed Soup with ½ cup of milk
  • ¾ cup Milk
  • 1 cup Shredded Cheddar Cheese
  • ¼ cup Butter (Melted)
  • Neutral Oil or Pan Spray

Instructions

  • Preheat oven to 400 degrees Fahrenheit.

Mix Red Lobster Biscuit Topping

  • Open the biscuit mix box and set aside the herb topping packet.
  • In a mixing bowl add the red lobster biscuit mix, cheddar cheese, and milk. Mix until combined. Set aside.

Layer The Bake

  • In a 9x13 baking dish add the alfredo sauce or mixed condensed soup and milk evenly.
  • Top with the seasoned chicken.
  • Spoon on the biscuit topping. Spreading evenly as possible.
  • Place in oven and bake uncovered for 25 minutes or until golden brown and bubbly. Make sure the chicken is cooked through to 165 degrees Fahrenheit.

Make The Butter Herb Topping

  • Mix the herb packet with the melted butter. Set aside.
  • Remove the finished bake from the oven and brush on the butter herb topping while it's hot. Let cool for about 10-15 minutes before serving. Enjoy.
