This easy chicken broccoli rice casserole recipe went viral on TikTok. It has Knorr cheddar broccoli rice mix, cream of chicken, cheddar cheese, and chunks of seasoned chicken. Yum. 

This is the perfect oven baked one pan meal or dump casserole for your next weeknight dinner.

TikTok Chicken Broccoli Rice Casserole

Why did this recipe go viral? It’s one of those comforting crowd pleasers that is so hands off. You literally put everything in a baking pan cover it, set a timer, and the oven does all the work. 

Using Knorr Cheddar Broccoli rice sides makes it even easier to put dinner on the table. You can easily make substitution and additions. Save time by using cooked chicken or make it extra cheesy.

Ingredients and Substitutions

Rice Mix - Knorr Cheddar Broccoli Rice Mix is really easy to find at most grocery stores. You can substitute another flavored rice packet if you prefer. 

Chicken - Boneless chicken breasts, tenders, or thighs will work. Cut them in chucks to cook quickly. Season them well to your preference. 

A store-bought rotisserie chicken or leftover cooked chicken is the easiest way to go, and will save on the cooking time. Remove the skin and shred or cut it into chunks. 

Cream of Chicken Condensed Soup - Any brand will do but if you want to mix it up substitute cream of mushroom or celery, cream of broccoli cheddar or condensed cheddar cheese soup. Yum. 

Cheese - Choose your favorite, mild or sharp cheddar, american, colby jack, or mozzarella. 

Frozen Broccoli - Most times you’ll see two options including florets and cuts, both will be great. Substitute fresh if you prefer, they will need to be added a bit earlier in the cooking process. 

Chicken Broth - Boxed, canned, or bouillon. Substitute vegetable broth in a pinch.

Tips & Suggestions 

Add an extra can of condensed soup for even more flavor.

For extra crunch top with crispy onions or jalapeños. 

Can mix in extra cheese, cubed up velvetta, parmesan, mozzarella or half of the shredded cheddar topping. 

Season and marinate your uncooked chicken overnight for extra flavor. 

Add aromatics like, chopped sweet peppers, onion, or garlic.

What To Serve With Chicken Rice Casserole 

This is a great one pan meal with starch, vegetable and a protein. 

Since the oven is going additional roasted vegetables or dinner rolls with butter would be great sides.

Leftovers and Storage

After enjoying this cheesy chicken broccoli rice casserole, store the leftovers covered in an airtight container for up to 4 days in the refrigerator. It can also be frozen for up to 3 months. 

Reheat easily in the microwave or the oven covered in foil. 

For freezer prep the whole baked rice casserole dish can be fully cooled and wrapped well to prevent freezer burn. Let in thaw in the fridge and it’s ready to bake.

  1. Grab and prep the ingredients, seasoned and cubed chicken, Knorr cheddar broccoli rice packets, cream of chicken soup, chicken broth, frozen broccoli, and cheddar cheese.
  2. Preheat oven to 375 degrees Fahrenheit.

3. In a 9x13 baking dish dump knorr rice mix, can of soup, and chicken broth. Mix well. Optional: Add any extra seasonings or cheese if you prefer.

4. Top with seasoned cubed chicken or cooked chicken to save baking time.

5. Add frozen broccoli.

6. Cover tightly with foil. Place in the preheated oven.

7. Bake for 40-50 minutes. Remove and carefully uncover and check the rice. See if it's cooked to your liking. If not place back into the oven.

Optional : If you are using cooked chicken check it around 25-30 minutes.

  • 2 5.7oz Knorr Cheddar Broccoli Rice Mix or Rice Packet of Your Preference
  • 1 10.5oz Cream of Chicken Soup Can or Condensed Soup of Choice
  • 2 ½ Cups Chicken Broth (Low Sodium)
  • 2 lbs Uncooked Chicken (Seasoned & Cubed) Tenders, Breasts, or Thighs or Cooked Chicken
  • 10 oz Frozen Broccoli Florets
  • 8 oz Sharp Cheddar (Shredded)
  • Salt, Pepper, and Seasoning of Choice

Instructions

  • Preheat oven to 375 degrees Fahrenheit.

    I put a ritz cracker crust on mine mixed with the cheddar for a delicious crust!

    Could you also add a can of cheese soup to the recipe? Or would that be too much? Or how much would you use? Would it change cooking time or anything??

      Hi Sue, adding condensed cheddar cheese soup sounds delicious. I would probably add 1/2 a can, if I was recipe testing it. I think it would make it extra flavorful and cheesy. Thanks so much for the suggestion.
